I like your recipe. I have to try it. I love filipino, asian and latino food. I see a lot of recipes on youtube and of course everybody have their favorite recipes, which look fab, but it's everyone's personal choice to make the recipes. And I like yours. My variation is popular in Tacloban City, but I've had many many tasty variations - some like an English beef stew, others like BBQ pork/chicken. All equally valid!

Recipe continued...
Allow marinade to cool and remove fat using kitchen paper. Reheat marinade and reduce to dipping sauce consistency.
Sauce can either be used to dip, or can be poured over chicken just before serving.
Serve with jasmine rices, boiled cassava and green salad.
