主料/ 螃蟹 2隻、冬粉 3球、蔥 3支、薑片 10片、八角 1粒、花椒 1大匙、粗辣椒粉 1大匙、香菜 適量
調味料 / 辣豆辦 1大匙、甜麵醬 1大匙、雞粉 1大匙、糖 1大匙、米酒 2大匙、醋 1大匙、香油 適量
做法:
1、洗淨的螃蟹切塊,沾裹地瓜粉備用。
2、起油鍋燒熱160度,放入螃蟹炸約3分鐘至熟,撈起瀝油備用。
3、燒一鍋熱水,放入冬粉後,關火燜煮。
4、炒鍋放入3大匙油,加入薑片、花椒、八角炒香之後,放入蔥、粗辣椒粉拌炒片刻,放入辣豆瓣、甜麵醬、略炒30秒。
5、加入1碗水與糖、米酒調味後,放入螃蟹拌炒1分鐘,起鍋前鍋邊淋上醋。
6、冬粉撈起打底,放上螃蟹與炒料,再放上香菜擺飾,即完成香辣蟹。
