ナンの生地を発酵させるために丸めているところ。ナンは一度生地を作ってからそのまま発酵させ、その後ナン一個分の生地にとりわけ生地を丸めてさらに発酵させます。2回目­の発酵が終わりましたら、ナンの形に伸ばしてタンドールオーブンで焼きます。
