I don't think Summer necessarily "grew", at least in the beginning. Seth didn't necessarily change her - her character changed because they made her a main character very suddenly. She was just supposed to be Marissa's stupid friend in the beginning, but they changed her to make her a love interest to Seth. It was like after the first few episodes, she was a completely different person.

She changed very quickly though. Its almost as if she took one mask off and put on another as soon as she met Seth. Seth is responsible for her change.
