Great Chef and Great Man. I much admire his style. Last time I was in New Orleans (just before Katrina) I managed to get to so many good restaurants...the two sisters and the gumbo shoppe( amazing artichoke soup!)- I wasn't even interested in going to chef E place. (you need to take a second mortgage) But I really really wanted to go to K.Paul's and didn't manage to fit it in.Maybe next time.
I have his cookbook "Paul Prudhomme's Louisiana Kitchen." I bought it back in the early 90's so I'm not sure if it's still in print. Anyway, everything I've made from it has been really good. He gives good detailed advice too.

i like having lemon on my chicken for a sauce...
so how much water----sugar and lemon juice do you use for making a fair amount of sauce...for about 4 servings....
