First shot using my new & first pressure cooker to make beans, and I hit the jackpot with this black bean soup...
I tried to mimic Progresso's 'Hearty Black Bean Soup', and this turned out to be a home-made, much more creamy & decadent version of that...

Someone gave me a big meaty ham bone in a vacuumed freezer bag and soon after getting my Fagor 6QT pressure cooker I decided to use it to make a black bean soup...
I'm in Tampa and Black Bean soup is big here with the Cuban influence...
Too often it's plain canned black beans, which I hate... Horribly boring...

I used about 6 cups of chicken broth, halved, sliced onions pole to pole, garlic, black pepper, A lil' hickory smoked salt, SpiceHouse.com's Salt-free Adobo seasoning (great ingredient), and the meaty ham bone in the pressure cooker with 2-3 (?) cups of black beans soaked overnight--- cooked for an hour and a half, about... I checked on the bean's creaminess every half hour or so...

Basically, I was trying to copy Progresso's 'Hearty Black Bean Soup' which is delicious!
Just pouring that over rice is amazing...

The pressure cooker pulls all the collagen and love out of the ham bone giving it all a lip-smackin' quality... After it was done and the beans were creamy, I removed the ham bone to let it cool...
I went at the pot of beans with the potato masher until about half the beans were blended into the liquid... I pulled any meat off the bone and added that to the pot too... I adjusted and intensified the flavors by adding good granulated garlic, onion powder, and I altered the greyish bluish color with some paprika...

I made Jasmine rice with real saffron threads and spooned the thick black bean soup on top, topping with chopped onion, cilantro, and the famous drizzle of good extra virgin olive oil...
It got better and better over the following days...
When it was cold, in the fridge, because of the collagen from the ham-bone, it was jelly-like----- but after a minute on the heat it became creamy and soupy...

  • The new generation of 'spring valve' pressure cookers are safe safe safe... There are other safety pressure releases that kick in before the lid would blow off... This is a Fagor Duo... Believe me, everyone starts out with that fear---- that's why they came up with the improved design I guess... After just a couple times you understand it totally and it becomes a valuable kitchen tool...

  • I forgot I put up this video... I was just practicing uploading a video and if I thought anyone was going to look at it I would have posted the recipe, which I just did now... Also I activated comments since it got 772 views... Maybe someone wants to talk about food! The vid got 3 dislikes, so maybe that's why... ??

  • I luv to cook, but pressure cookers make me real uncomfortable. Saw Grandma blow one up when I was a kid :/)
