You had me with the goat cheese. NEVER have I seen mundane old watermelon presented like this, and it has to be great. Was there any of it left by the time you got it to the fridge?
Fireworks require beer and popcorn, but before the fireworks....... I could pig seriously on a vat of this.....

@sunsetlover That does sound good! I have been known to do that but use it in cocktails and smoothies.

@ownhomedog It would definitely be a little more twangy, but it might be delicious! It sounds like it would be good, but before I dumped the whole thing in there, I would probably make up a few bites worth, but please let us know how that turns out!

I make a watermelon salad similar to this. I add red onions that were soaked in a bit of vinegar (to cut the bitterness), feta cheese and mint. It's SO good!
