WHAT ABOUT THE CHEESE???? He's missing the best part. He pretty much made a fajitas sandwich.
I would soak chicken breast in a brine for 20min. (to add moisture to breast, make it nice and juicy). Flavor the breast with spices and then grill/bbq. I'd also grill the onions and green/red peppers. Grill everything. Instead orange juice, use freshly squeezed lime juice. Add a little bit of cilantro.

It chipotle sauce get it in waltmart mexican food not racis im mexican nice just like my dad cooks quesadillas but use another marinating way
