That was the cafe car all that water was coming from. That means if the car lost all that water, the cafe car wasn't able to heat up any food with their steam microwave.

Oh well, I guess those people had to starve all the way down to Washington, GONNA HAVE TO DRINK THE TRAIN WATER!!! :o
