Anyone who took Chemistry class and witnessed the glowing hydrogen gas in a vacuum tube is familiar with this phenomena. When waves of electromagnetic energy strike an electron in a gas, they cause the electron to jump up to a higher molecular orbital than the one it was previously in. When the electron falls back down, it releases a photon of energy equal to the energy difference between the original energy level and the one it was ionized up to. What we are seeing is electrons in CO2 and CO gas (produced by the burning toothpick)jumping up to higher levels as they are struck by microwaves and falling back down, emitting electromagnetic waves that fall within the visible spectrum of light (hence, the glow). IT'S SCIENCE IN THE MICROWAVE!!! Somebody call Bill Nye.
