La Queimada is an ancient tradition in Galicia, a midnight ceremony in which queimada, a fiery drink, is prepared from a liquor, lemon rind, sugar and coffee beans set on fire in a clay pot. I suspect that the original version of this used mead many years ago. The "bruxos" - the sorcerers - chant an incantation to the sound of Gallic bagpipes to send witches to their death in the brew.
