Ingredients
1 cup flour
¾ cup rolled oat
½ cup sugar
1 tsp baking powder
½ tsp ground cinnamon
½ tsp nutmeg
¼ tsp ground ginger
1/3 cup vegan butter or margarine
¼ cup of your favorite nut butter (I used peanut butter)
2 egg replacers
½ tsp vanilla extract
1/3 cup vegan chocolate chips (you can add more if you want)
¼ cup walnut (optional)

Preheat your oven at 350 mix everything together in a bowl. Scope about tablespoon amount and shape them into patties. place them on a cookie sheet, and bake for about 12-15 minutes. Mine took a bit more my cookie sheet is really think. Also I started the broiler for about a minute to give the top a golden color (but you can skip this part)

This was inspired by the Sarah Kramer nutty oatmeal raisin cookies, I just made few changes. If you switch the chocolate chips for raisins thats great too.

  • great! you can definitely eliminate the walnuts. You can even make just plain peanut butter cookies. I use Ener-G I like it and the box replaces 100 eggs. There is Bob's Red Mill egg replacer. I also looked in the cook book, you can use flax seed powder 2tbsp + 3 tbsp water = 1 egg mix it and let it sit for 3 minutes before using.

  • awesome! I saw your message thanks a lot for posting this video, of course I like it lol. I will have to try this sometime they look delicious but I won't add any walnuts to mine. Also I was wondering what kind of egg replacer you use and if I don't have any egg replacer do you know if is it possible to substitute it for something else.
