For my children and for those of you who asked.

Meat loaf made easy. It tastes good too. =D


Recipe for Mama's Meatloaf:
Ingredients:
1 small onion, chopped (optional)
4-5 cloves of garlic, chopped (optional)
2 medium sized free-roaming) eggs, beaten
1 package saltine crackers, smooshed
1 can of tomato sauce, 1/2 mixed into meatloaf and 1/2 poured on top and cooked for an additional 15 mintues after the first 45 minutes.
1-1 1/2 lbs. (Really Cold) lean ground beef
2-3 T A-1 Sauce
2-3 T Worcestershire Sauce (What's this here sauce, as I like to call it)
2-3 T Ketsup
garlic powder, salt & pepper to taste
Lots 'O LOVE

Mix all ingredients quickly and shape into loaf pan. Cook for 45 minutes in a preheated oven set at 350 degrees.

Pour 1/2 can of tomato sauce over top of meatloaf and cook for another 15 minutes.

Let stand for 1/2 hour. Cut and serve. YUM!

Waste not, want not: We eat meatloaf sandwiches for lunch the next day on hoagie buns with lots of ketsup.

Recipe for Dali's Famous Potato Pancakes:
Very cold leftover mashed potatoes.
Chopped onion to taste
Chopped garlic to taste
Lawry's Seasoned Salt to taste
Jane's Crazy Mixed Up Salt to taste
Pepper & salt to taste (you probably don't need any regular salt with the other two types though.)
EVOO (Extra Virgin Olive Oil) Placed in Teflon pan for frying.
Lots O LOVE

Mix all ingredients except (EVOO) while potatoes are very cold. Fry on medium heat until golden brown. Drain on paper plate before serving. YUM!

*NOTE: Eat only occassionly. ~ Everything in moderation. ~ I have this meal about three times a year, when each of my three children asks for it. =D

  • I like your sense of humor! But here's some things I've learned. Olive oil tends to burn at higher heat, if you are going to fry something. It's better at low heat to saute something. Canola or peanut oil works great for high temps. I never care about eggs as long as they are fresh, but then you used just any tomato sauce? I care about every ingredient. Not trying to be rude but you care so much about eggs and then just use any canned sauce?

  • @DickLodge68 Hi, yes, I care about eggs so much, because I care about the lives of the chickens who lay them. I want them to come from chickens who at least have "real" lives. Not chickens that are kept in cages their entire lives to be egg laying machines. The canned tomato sauce, buy some different cans and do a blind fold taste test. Mostly you are paying for the brand name. By the time the sauce is added to all the other ingredients in the meatloaf, I honestly don't think it matters.

  • @DickLodge68 Thank you for the info about the olive oil. You are correct. I have since found that to be true. I was going by something Rachel Ray said a long time ago. She probably doesn't use olive oil to fry things in any longer either. ツ

  • @daligoddess2006 Honestly...I can't handle Ray anymore. I try not to judge but WOW she really got hooked into TV, magazines, whatever, and herself. And it's sad because that ruined it for a lot of people. Meanwhile...I love cooking shows and think Julia Child was one of the best EVER. She still kills me! She was simply awesome!

  • @DickLodge68 I don't watch t.v. anymore so I never get to see any of the cooking shows. There's a guy on YT I love his cooking videos. Maybe you will too. His name is Chef John from Food Wishes. Love his vids and his food is awesome.

  • i like to make a super bomb-e crust of BBQ sauce and sprinkled brown sugar before baking. can't wait to try this one!

  • @cutelli87 I recently did get one, but honestly, I think it's easier just to hand chop it rather than try to clean the utensil later.

  • @daligoddess2006 I'm not going to be rude to you. If you like Chef John, so be it. Personally his voice is "ssoooo" annoying with "ffoooodd wishes". Puhleeze. Personally, I like watching your videos better. Chef John seems to come off as a snob and you just seem like a normal gal cooking something.
