Ingredients:
2 tbsp olive oil; 1 cup chopped onion; 3 tsp minced garlic; 2 cans chopped tomatoes; 1 can low sodium chicken broth; 1 pkg Brie without rind, cut into pieces; 1 tsp salt; 1/2 tsp pepper
Saute onion in hot oil in a Dutch oven until tender about 8 minutes over medium low heat; add garlic and saute 1 minute longer. Increase the heat to medium high, stir in chopped tomatoes and chicken broth and bring to a boil. Simmer about 10 minutes, stir in Brie until melted, Stir in salt and pepper. Serve with crispy croutons.
