A Chantilly Lace wedding cake decoration by a master baker. Beautiful but simple or the other way around. Just lovely.

  • Nope, he insists it's called Chantilly lace and that's that. Not cornelli, so I guess he didn't learn his master baking from the same baker as you.

  • You guys are just rabid about it being called Cornelli lace. I'll run it by the Master Baker tonight to see if I just misheard his Swiss accent. It's possible because I thought he was always saying granache instead of ganache.

  • OK! So I finally found out the "recipe" for this icing. ICE-N-FILL brand icing. There you have it. He says it's the best on the market.

  • The lace work is called Cornelli Lace, that's not a spatula, it's a palette knife, the "beading" is called a shell pattern! Can't be whipped cream either i would say by the way it shapes it's Royal Icing! Maybe learn the techniques before you commentate!

  • @katchyname hmmmm.... I don't care to learn about the techniques so much as commentating. He's been baking and decorating for 45+ years so I'm not going to question whether it's Chantilly or Cornchip lace. BUT, it IS a whipped cream icing and it is GOOOOOOOD. I've asked him for the recipe several times to post out here but he's not so forthcoming. Thanks for the input - really.

  • It's not called "chantilly lace" It's called Cornelli lace, regardless of whether its made with chantilly cream or not.
