It's not called "chantilly lace" It's called Cornelli lace, regardless of whether its made with chantilly cream or not.

Nope, he insists it's called Chantilly lace and that's that. Not cornelli, so I guess he didn't learn his master baking from the same baker as you.

You guys are just rabid about it being called Cornelli lace. I'll run it by the Master Baker tonight to see if I just misheard his Swiss accent. It's possible because I thought he was always saying granache instead of ganache.

OK! So I finally found out the "recipe" for this icing. ICE-N-FILL brand icing. There you have it. He says it's the best on the market.

The lace work is called Cornelli Lace, that's not a spatula, it's a palette knife, the "beading" is called a shell pattern! Can't be whipped cream either i would say by the way it shapes it's Royal Icing! Maybe learn the techniques before you commentate!

@katchyname hmmmm.... I don't care to learn about the techniques so much as commentating. He's been baking and decorating for 45+ years so I'm not going to question whether it's Chantilly or Cornchip lace. BUT, it IS a whipped cream icing and it is GOOOOOOOD. I've asked him for the recipe several times to post out here but he's not so forthcoming. Thanks for the input - really.
