A perfect steak on a gas grill? Not possible. NOT POSSIBLE.

you never mention the temp you need to cook the steak on. you say preheat to 500 but then you just say med-high.

@lowell191 Having pre-heated on high to approx. 500 degrees, reducing your burners to medium-high will hold the temp. between 450 and 500 degrees. Your cooking grids will retain more than enough heat to sear the steak beautifully, and by turning the burners down, you are reducing chances of flare-up.
