It's called hammering-on and pulling-off. You basically hit the strings so hard with your finger that they make a sound (hence "hammer-on) or you "pluck" the string with a pulling motion (hence the term "pull-off"). Both techniques are of course executed using your freting hand.
your pinky bends in a way not all human can do.
