I made this and it is good. I had to cook it for way way longer than it said in the recipe, maybe because I don't have a dutch oven? I just used a stock pot.

Actually, for food-related shows or commercials, it's common practice to spit out the consumed food if there's a cut away or a pause like the cues before breaks.

My version: 1 bag of SMALL red beans, 5 andouille sausages chopped fine, 1 onion, 2 stalks celery, 1 green bell pepper, 4 tablespoons Emerils Essence (recipe on foodnetwork com). 2 tblespoons Kosher salt, water to cover. Cook the onion, pepper, celery until soft, add 4 cups water and puree with a wand blender. Add beans, sausage and Essence & enough water to cover beans one inch. Cook with lid on for 4 hours, stirring, and smashing beans when soft enough. No pickling, no extra work.

Y.A.Wrong:
1) Yep pickling process seemed like way too much work. 
2) Like your recipe too, how do you make your rice? I've never tried the way he did it here. In his rice episode Alton cooked it in the oven, I followed his recipe & turns out really good (usually). Been looking @ rice cookers in my quest for consistently perfect rice...just not sure its worth it.
