I have no idea where the website go the info from that nutritions would go when any vegi for that matter is frozen, but I can tell you that vegi should be used within a year and they do last at least a year frozen blanched or not. I grew up on self-grown frozen vegis that were used from harvest season to harvest season.
I know that cooking in any form not only breaks down certain enzymes, but also vitamins mainly. So it actually does not matter if you cook it before or after.
My 2 cents.

@KayakFisher01 Ya that does sound good. I was thinking about getting a dehydrator for my veggies this summer, so I still may try and get one.

how do you get the food sealer to seal properly if it sucks the moisture from the zucch. I find it makes the sealing process difficult.

@Jadee5310 . I actually have to "trick" it. As you have stated once it starts to seal and looks like all the air is out it will then start to pull in water. So right at this point I turn it to "seal" only so it will stop vacuuming and doesn't pull in the water. Not a perfect method, but works pretty well.

@ryan024316 . Gotcha. Well I actually harvested a bunch of peppers and squash yesterday so it may be a few days before I do another harvest. But I'll try and put myself in there.
