my airing cupboard is warm will that matter and do i need light if so does it need to be a heat lamp and does the airing cupboard need to be really ventilated

@TheMrHarryShow. Your airing cupboard will be fine with no light in it, just ensure you have good crossflow of air. Generally a heat lamp/bulb is to generate the heat in a space, you must still have a good crossflow of air.

Do you leave the seasoning on or do you wash it of with a water/vinigar sulution and then dry with towels before hanging it to dry??

@kearress. Guys just hang it the way it is with all the spices on the steaks as this will give it great flavour once dried. JUST BE REMINDED ONLY MARINATE FOR 2-4 HOURS. NOT THE 24 HOURS WE SAID IN THE VIDEO.
