WeighInOnline Diet Recipe for delicious Middle Eastern Spiced Chickpea and Tomato Soup. Weight Loss Classes at www.WeighInOnline.com
For 4 servings:

2 teaspoons oil
2 large onions, finely sliced
2 cloves garlic, crushed
2 tablespoons Middle Eastern Spice
2 teaspoons chicken stock
3 cups water
zest and juice 1 lemon
salt and ground black pepper
2 x 400g cans tomatoes in juice
390g can chickpeas
handful parsley, chopped
4 rashers bacon, grilled and chopped


Method:
1. Heat oil in a large pot and sauté onions and garlic until soft.
2. Sprinkle with Middle Eastern Spice and cook for a couple of minutes to develop flavour.
3. Add chicken stock, water, zest and juice lemon, salt and pepper and tomatoes. Bring to the boil.
4. Puree or puree half the chickpeas and add with whole ones to pot. Simmer for 5 minutes.
5. Serve sprinkled with grilled bacon and parsley with Turkish bread on the side.
