This is because of the resolution. The more pictures taken per second, the more reduces the resolution of the videos.
Here are the resolutions:
210 fps: 480 x 360 Pixel,
420 fps: 224 x 168 Pixel
1.000 fps: 224 x 56 Pixel.
(i personally think that the videos with 420 frames are still ok, but with 1000 frames they are not so good.
