Hi, I'm Stephanie Gallagher, the Iron Chef Mom, and today, we're making a Crockpot pizza casserole recipe.
Although this recipe is vegetarian, pepperoni or browned ground beef would both be nice additions to this dish.
For this recipe, you will need:
1 14.5 oz. can diced tomatoes
26 oz. jar spaghetti sauce (and you can use any kind - I happen to have a roasted red pepper sauce, but it can be mushroom, marinara, whatever you have on hand)
1 cup diced onions
1 cup diced green peppers
1 cup uncooked macaroni
8 oz. sliced mushrooms
1 tsp. dried Italian seasoning
1 cup water
2 cups shredded mozzarella cheese
Place all of the ingredients, except the cheese, in your slow cooker.
Cover, and cook on low for 5 to 6 hours.
When ready to serve, sprinkle with mozzarella cheese.
