I can imagine after an early Bb5, Bd7 (will prevent pinning f3) d5 Ne5 swap his good bishop on d7 and you have space. But that's probably not objectively best. Probably any development is just fine. He shouldn't remove pressure on the pin, especially trading his good bishop to give you a pair...
With his weak light squares, he did himself no favors by trading off his light-squared bishop without you even kicking the bishop. When he played 7...N-KB3 I would have played 8 P-K5, attacking the king's knight with the pawn and discovering an attack on the undefended queen's knight with your bishop.
It seems you forgot his Knight was hanging with check around 4:40. Also e5 at 3:40 wins a piece I think

Positionally, I like your Qh4 better than dxe because d6 hampers his bishop. You want to keep it there.
With your variant of 1. Qh4 cxd, your move is 2. Qxc6+.
