I see that you are using a false bottom in your brew pot. I assume this it to strain out hops? Are you planning on using whole leaf? Will that false bottom strain out pellets as well?

Step infusion is basically raising the temp in steps during the mashing process. Our mash will be continually recalculating through the coil in the HLT. Te burner under the HLT and the water inside I'll allow us to precisely control the mash temperature indirectly without the risk of scorching the grains. It will also enable us to do step mashing.

Pellet hops disintegrate when adding them to water. The false bottom is for larger particles like whole leaf hops that might clog something up.
