I have Screen Capture software but I thought it wouldn't work because it would "clog" my computer.

Couple friendly suggestions: Screen capture software or a tripod for the camera.
Reduce dock clutter by using spotlight as a launcher, or putting a folder of aliases in the dock. Especially in 10.5 since you no longer have to right click dock folders to get a list of their contents.
