Wow, finally someone who knows how to cook fajitas, and what meat to use. However, the grate you put on top of the coals is a bit of a cheat. I guess it saves cleaning the ashes off like you would have to with the traditional method of putting the meat right on the coals. :)
Now that's some good grillin!! I'm going to try that idea you did on your onions with the lager beer. I bet that was delicious and probably a hint of the beer taste. Good job man!
