making this right now. A hint to make it more crispy to add some beer to it. adds more depth of flavor and-the carbonation makes it more crispy. Like beer battered fish.

I love banh xeo (banh cheo in Cambodian). I make it with ground pork and onions for the filling. bomb. I do the crepe first then add the bean sprouts and the cooked meat and onions. fold. serve with fresh crispy lettuce, herbs and sweet vinegar sauce. drool*

@adiavoy You are right. MY mother-in-law is Vietnamese. We've had a checkered past, but when we cook together, you can tell she's genuinely excited. Funny how food brings people together. We just made this a couple of days ago and it was delicious. Her recipe was exactly the same. We're making bánh cuốn this weekend.

One of my favorite Viet dishes. I grew up with the Southern version. I call them Viet tacos or crepes. lol :)
Not going to lie... you guys are probably a Vietnamese mom's perfect son-in-law if you can cook like that!
