The answer lies in the shape of the egg. The egg is somewhat shaped like a cone. By blowing right on top of the egg this creates low pressure on top and high pressure below. This pressure difference makes the egg jump upwards. This effect is just the same principle as the 'lift-up' of an airplane wing. In hydrodynamics this is called: the Bernoulli -effect.
