Thai Burgers Recipe from the Oriental Express Weight Watchers recipe book which I was asked to review.

Ingredients;
500g (1lb 2oz) Lean Turkey Mince
4 Spring Onions, chopped finely
3 Large Garlic Cloves, crushed (I used lazy garlic)
4 Teaspoons Thai Red Curry Paste
3 Tablespoons chopped Fresh Coriander
Low Fat Cooking Spray
Salt & Black Pepper

To Serve;
1 Tablespoon Extra Light Mayonnaise
2 Tablespoons Sweet Chilli Sauce
2 Teaspoons Lime Juice
4 Plain Mini Naan Breads
4 Little Gem Lettuce Leaves
8 Cucumber Slices
8 Tomato Slices

This recipe makes for a delicious and light lunch or dinner. I had one for my dinner and the other for my lunch in work the following day. They are light (quite unlike beef burgers) which seem to weigh you down. I would never have thought to split the naan bread, great way to save points and again it is much lighter than a large bread bun.

Overall an absolute winner, I've never made turkey burgers before (usually make beef) but now I know how tasty they are I'll be using this recipe again in this summer!

VEGETARIAN OPTION:
A variation of this is to replace the turkey mince with 250g (9oz) Tofu, drained and grated coarsely and mixed in the bowl with the other ingredients.

So quick and simple to make with everyday ingredients and delicious too! Give it a go and let me know how you get on! - Francesca. x

  • pita bread has alot of carbs right so its not a good idea . Whole wheat tortila wrap is better

  • @valentinesday10 The media makes out like carbs are the devils food, it makes me laugh! I think it's best to eat a balanced diet and cutting out food groups isn't balanced. I agree, whole wheat is great, I used pitta for the sake of the recipe. I recall them being whole wheat pitta's, I rarely buy white bread much prefer brown bread etc. Yummy! x
