  • my grandmother who lived on a small farm in NH, made fantastic sugar cookies.

    she used lard (made from rendered chicken fat-not pork fat-both have a neutral flavor)

    the idea of using chicken fat seemed totally yuck,but hey,it was too late to stop,i was addicted to them.

  • I hope you did not preheat the oven for the entire hour that your dough was in the fridge! :-)

  • To soften butter in the microwave without melting it, put it in for five seconds, near the outside edge of the turntable. Then roll it over/flip it onto the next side and do five more seconds. Repeat as necessary till it is soft enough (generally 20 seconds total for a refrigerated stick).
