  • If you guys want to play around with this stuff you can get maltodextrin from nation food and starch free.

  • @phattrumpet2 thats why you combine the two and make a paste. Use an offset and make a film on a sheet of acetate. Then dehydrate it. Then Pull I t off the acetate and pulverize it into powder.

  • @kjb206 there's no fat in balsamic vinegar...

  • This is pretty simple to make as well. More people should be trying some of these techniques at home! (and if you are interested, and can afford it, spring for the Alinea cookbook. It's excellent.)
