Ingredients:
3 cups flour
1 tsp. baking soda
1 tsp. salt
1 tsp. grated lemon rind
2 cups sugar
¾ cup canola
3 eggs
1 tsp. vanilla
1 (21oz.) can peach pie filling
1 cup pecans, chopped and toasted



Preparation Directions:
~ Stir together flour, baking soda, salt, lemon rind, and sugar in a large bowl. Whisk together eggs and oil. Gradually add egg mixture to flour mixture beating at low speed with electric mixture until well blended. Stir in vanilla. Fold in pie filling and pecans just until blended.
~ Pour batter into 2 8 x4-inch loaf pans that have been coated with cooking spray.
~ Bake at 350 degrees for 60 minutes or until a cake tester inserted in center comes out clean. Cool loaves in pan on wire rack for 10 minutes then remove from pans and cool completely.
