  • @quivalla ->No, like he said...the reason is to prevent the salmon from curling up when cooking like a lot of fish does. The added bonus is that it allows the seasoning and oil flavors to reach more of the fish.

  • @RandomSenselessActs And also there's a small layer of fat beneath the skin that you want to render in order for the skin to be crispy.

    And does anyone have an idea of how much of each ingredient for the vinaigrette?

  • that looks great except I do not like crab but I am sure that could be easily substituted.. I might try his take on salmon every time I get salmon at restaurants its dry and not very flavorful.. I suppose I could try to make it my self for once lol...

  • @jakamneziak If you hate crab meat, don't add it.

  • @holdthelight11 There is lemon in the vinagrette. Works as the acidic part of the preparation. Has some of the characteristics as vinegar, but obviously are not the same. I hope the info helps you. Sincerly, from a Culinary Arts student.

  • why does he call it a vinaigrette when there is no vinegar in it? its oil and water.
