【材料】:去骨大雞腿1支、乾香菇20朵、紅蘿蔔1根、蛋1個、蒜3粒、薑1塊、蔥1支、醬油1大匙、糖1/2大匙、雞粉1小匙、太白粉適量、胡椒粉適量
【做法】:
1. 雞腿去皮切塊再加入醬油、糖、胡椒粉、蛋白、太白粉醃漬備用。
2. 老薑去皮切片、胡蘿蔔削皮切片。
3. 蒜頭拍碎、香菇泡乾對半切、蔥切段。
4. 起鍋熱油把雞塊放入稍稍過油後,撈起瀝油。
5. 利用餘油把蔥白、蒜末、薑片放入爆香後,再把胡蘿蔔、香菇放入炒香;再加入醬油、糖、水、雞腿塊、雞粉調味紅燒至入味即可完成「紅燒香菇雞」。
