Bakers say they are trying to find a substitute for the artery-clogging oils.SOT: Manny Alaimo Jr, Owner of Villabate Pasticceria: "It's going to effect us really big and everything because we've been trying to experiment with zero trans fat and we find that it has a tendency of changing the colour of the product, changing the texture of the product. You don't have the same taste that you want there anymore. So, it's going to effect us in a big way, it really is." [Notes:various of mixer, baking process]Chefs say it's the trans fat that makes their pie crusts flaky, their crackers crispy and their muffins moist. It has a tendency of drying it out faster. And also, if you see some loaves of bread and everything, and they're nice and puffy. And I think that's what we have to remember at the end of the day.
