【材料】:五花肉一斤、青江菜五棵、蔥2支、生薑半塊、蒜頭4粒、八角4粒、草果4粒、冰糖2兩、紅糟豆腐乳3塊、紅糟1大匙、醬油1大匙
【做法】:
1先在五花肉表皮上劃幾刀,再放入滾水中川燙後撈起。
2把蔥切大段放入鍋中,再依序放入薑片、蒜頭、草果、八角、冰糖、五花肉。
3紅糟豆腐乳壓碎後放入後,再把紅糟、醬油放入,接著倒入約八分滿水,以大火燒滾後再轉小火燜煮3小時。
4青江菜放入滾水中川後,撈起擺盤,再把燜煮好的腐乳肉放上即完成「腐乳肉」。
