Bacon Ranch Potatoes

These are terribly decadent and taste so good they are definitely bad for you

6 cups mashed potatoes (prepared with milk and butter)
1 cup cottage cheese
1/2 cup milk
1 medium onion finely chopped
2 tablespoons ranch salad dressing mix
1 pound sliced bacon, cooked and crumbled
2 cups (8 oz) Monterey Jack cheese (I used cheddar)
1 cup crushed butter flavoured crackers (about 25) I used plain Ritz crackers.
1/4 cup butter melted

In a bowl combine the potatoes, cottage cheese, milk, onion and dressing mix. Spread in a greased 3 quart baking dish. top with bacon and cheese.
Combine cracker crumbs with melted butter and sprinkle over top. Bake uncovered, at 350F for 35-40 minutes or until bubbly. Yield 8-10 servings

I would recommend mixing in half the bacon into the potatoes, and sprinkling the rest over top. I found the top layer too thick. Another way to fix this issue is to put it into a large rectangular baking dish, so that it is thinner. This is a very tasty recipe and would be very good to bring to a pot luck.
This is a good way to use up left over mashed potatoes. If you don't have six cups, you can easily halve this recipe to scale it down.
