A 7-lb. tuna fillet at the Tsukiji Market, Tokyo

It took 3 men to lift this impressive piece of tuna and bring it to the cutting board. Watching the man using a sword-like knife to cut out one 7-lb. piece of tuna was very impressive. We were told that particular (central) part of the tuna was the very best and most expensive and that it had probably been cut out for one of Tokyo's most prestigious sushi restaurants.
