@Launa23 If you refrigerate sushi rice, it will ruin it. It will harden and become unusable.

@Launa23 if you must refrigerate the rice, you to steam the rice afterwards and cool it again. You also may want to add a little more vinegar since when it is re-steamed, you will lose some due to evaporation.

think about doing a party. how long can the rice stay out in room temperature? I heard i should use a wet tower over the rice if i am not going to use it right the way
