The playing takes time to develop however the theory really isnt as complicated as it sounds, you just have to become familiar with the terminology. Between any octave say A to A, there are only twelve notes and each note has a term ie.. root, minor 2nd (flat 9), major 2nd (9) etc up to twelve notes. He is basically using all the notes that are not commonly used within a five note pentatonic scale, which helps give it the exotic sound :-)
