Injera is the staple food of Ethiopians baked in special injera ovens daily. It's usually eaten for breakfast, lunch and dinner with a variety of sauces. Made from "tef" - the world's smallest grain, the injera is a spongy, sour consistency. For someone like me who loves sour dough bread and sour cream, I loved it. A cross between a taco, enchilada and burrito, don't leave Ethiopia without giving injera a try.
Ethiopia is also loaded with mangos, pineapple, papaya and, of course, Western food of which the most famous is Italian due to an Italian presence since the 1800's. We never went hungry....
