This wasn't Top Gear, it was series called Jeremy Clarkson's Motorworld.
The was a different episode for each country that makes cars. This being the Italian episode obviously!

since there is no air in coolant lines, the temperatures are allowed to go beyond boiling before and evaporation occurs. So when the above boiling coolant reaches air, it evaporates immediately, causing smoke. (coolant has a higher boiling temp than water btw). Hope that cleared things up.

It wasn't the rad or the engine. Engine would have had a fire and oil gone everywhere if a rod had gone through the oil pan or a valve cover blew. This is clearly a coolant hose exploding, its the weak point in the system and designed to fail before anything else, hoses explodes, already hot coolant flash fries. Thats where all the smoke comes from and why it goes so far. An engine actual black splitting or exploding is MUCH louder.
