Why the fuck would I trust you with my Paypal information.. on a site not affiliated with Paypal?

I think after setup your buy button there is a place to enter a URL to take people to after the transaction is complete but I cannot say for sure. You'll have to get into Paypal and create a button and try it for yourself.

that is exaklty what I mean how do I do so it know that they have payed and how does paypal link them to the vip area?

There are other ways to take payment that won't cost you anything. For example you can put a Paypal buy link and after they pay just take them to that VIP area.
