Everyone in the Caribbean cuts their like this... I am Haitian, we fry them, take them out press it really hard about half a centimeter, refry it, take it out sprinkle on some sea salt and then we enjoy it. Other ways to prepare it is just to broil it in water and serve it up with a delicious broiled saucy spicy red snapper or cod dish.

Actually, the green ones are really good. I cut them to round slices then fry them and eat them with salt. And the yellow ones are equally as good with melted cheese.

The plantain that is still green can been done in different ways. Here in Puerto Rico, we eat them as "tostones", which is double fried plantains. And if you only fry them once, mash them down you create "mofongo", which usually is filled up with different types of meats and seafood. Very simple and very satisfying.
