I`ve made Italian noodles with the same basic recipe you gave, with the addition of some olive oil, plain water or juice, even wine or beer and cayenne pepper, lemon zest, liquified fresh spinach, carrot or beet juice, etc.. The key is to not let the batch get too wet. Adjust it with either more flour, or liquid.
Now you got yourself a Camerawoman...lol Looking all professional all ..except the hair. lol
TIP: If you get a bit of shell in the egg, use the edge of the broken shell to scoop it out. It has the same slime coating and allows the shell to slide right in and take out the bit with little loss of egg white.
