Electrical heating wire around a sparkler heats up and ignites the sparkler. The 'sparkle' moves into the rocket housing and ignites the fuel.
Different fuel are used for different runs; paper, cardboard, polystyrene...
Out of sight of the camera are a set of strain gauges measuring the thrust being produced, so comparisons can be made against the different fuels.
