A hearty warm Italian soup, thats delicious all year round.

Tuscan Bean Soup

Serves 6 - 8

Ingredients:
3 tbsp olive oil
2 medium onions, chopped
100g pancetta or smoky bacon lardons
800g chopped tomatoes
100g small penne or soup pasta
1 tsp mixed herbs
150g baby spinach
400g can of butter beans
Salt and ground black pepper
Sugar to taste
Olive oil
Crusty bread to serve

Method
In a large saucepan, pour in the olive oil and fry the onions until soft, allow 10
minutes. Add the pancetta, turn up the heat and fry. Then pour in the tomatoes
and bring the mixture to the boil.

Once boiling, add the penne or soup pasta,reduce the heat and leave the pan to simmer for 10 minutes approximately, in order to intensify the tomato flavor and cook the pasta. Drain and rinse the
butter beans. Add the beans and the spinach to the pan and allow to warm
through for a few minutes.

Season the soup with salt, pepper and sugar to taste.
Pour the soup into serving bowls and serve with warm crusty bread.

  • but wouldn't u cook down the bacon first, drain the fat and the saute the onions. becuae the bacon always has that fatty texture to it when u cook it that way. or am i wrong. love your accent btw. and quite attractive.
