OK, so for anyone who doesn't know, the slower your character's running speed, the slower you'll run the dash. I have a speed of 79 and could NOT get lower than 5.2, which is good enough for All-Pro. I couldn't understand why I couldn't get Madden because I assumed it scaled with your speed, it doesn't. That means, you need to figure out which dashes you can actually complete =]. Save your game, do a few events without saving to figure out which difficulty you can do, then load and go =].
