    There is some reason for the shape, the wide blade helps keep you cutting flat. Or not diving into meat you wanted to keep uncut. The name is "curved skinner" I think.... We get them from KOCH and the brand is Victornox.

  • Wonderful. Thank you for sharing. We are processing 2 dozen birds this weekend and they are the first we've ever done. I've been too preoccupied with the idea of processing to think ahead to cutting the bird up. Now I have other options than just 25 roasted chickens.
