Wonderful. Thank you for sharing. We are processing 2 dozen birds this weekend and they are the first we've ever done. I've been too preoccupied with the idea of processing to think ahead to cutting the bird up. Now I have other options than just 25 roasted chickens.

Hi David,
There is some reason for the shape, the wide blade helps keep you cutting flat. Or not diving into meat you wanted to keep uncut. The name is "curved skinner" I think.... We get them from KOCH and the brand is Victornox.
